The protected designation of origin (PDO) is a sign of quality regulated by the European Union. It's the assurance that these products are made in their region of origin. Their milk are from a defined geographical area. Their process is passed down from generation to generation. All of this is transcribed in a precise set of specifications. Each French region has developed its own technologies over the history according to geographical and climatic constraints, to preserve the milk. An authentic cultural and gastronomic heritage that has given rise to 49 dairy PDOs.
