49 dairy PDO are French out of 180 in the European Union:
44 cheeses, 3 butters and 2 creams.
France is the only country with such a wide range of dairy products.
1,200 cheeses; an unequalled variety of creams, butters...

Their milk are from a defined geographical area. Their process is passed down from generation to generation. All of this is transcribed in a precise set of specifications. Each French region has developed its own technologies over the history according to geographical and climatic constraints, to preserve the milk.
